Sugarless Peanut Butter Chocolate Protein Cookies

Today is the last day of super hard workout training before the tournament.

After 2 hours of exercises and practice I was super hungry (surprisingly. Normally I just wanna hurl).

After downing half a turkey sammich and a pure egg omelette at 3 I got hungry again at 6. What to do, what to do? I must eat something healthy but I totally wanted cookies. Taking a hint from Shannon’s protein pancakes I went online looking for protein cookie ideas. Unfortunately most of the recipe called for sugar substitutes and I don’t eat sugar on best of days.

So, I made my own sugar free version of this receipt .

1 egg
1 cup of peanut butter
1/2 cup of shakeology chocolate powder
1 tsp of vanilla extract

Mix, roll into balls and place on a sheet of foil. I pressed the designated peanut butter cookie symbol into the balls with a fork and then baked for 10 min at 350F.

The finished results were delicious. The no sugar thing is probably not for everyone but I really enjoy it. The only complaint I have is that the cookies are a tad flaky so they fell apart really easily. Maybe if I had let them cool it would’ve held together better.

Also they were really satisfying. I had one and it curbed my hunger. So I guess that’s a bonus.
